Fiesta de Colores Tacos
Ingredients for the Tacos:
Assorted Colored Bell Peppers (Red, Yellow, Green, Orange) - 2 cups, thinly sliced
Purple Cabbage - 1 cup, shredded
Chicken Breast - 2, thinly sliced and marinated
Taco Seasoning - 2 tbsp
Blue Corn Tortillas - for a pop of vibrant color and a unique twist
Lime - for garnish
Fresh Cilantro - for garnish
Queso Fresco (or your favorite cheese) - crumbled
Avocado Cream (recipe below)
Ingredients for the Avocado Cream:
Ripe Avocados - 2, pitted and peeled
Sour Cream - 1/2 cup
Lime Juice - from 1 lime
Garlic Clove - 1, minced
Salt & Pepper - to taste
Instructions:
Prepare the Avocado Cream:
In a blender, combine the avocados, sour cream, lime juice, garlic, salt, and pepper.
Blend until smooth and creamy. Adjust seasoning to taste.
Refrigerate until ready to use.
Cook the Chicken:
Season the thinly sliced chicken breast generously with taco seasoning.
In a skillet over medium heat, cook the chicken until golden and fully cooked through. Set aside.
Sauté the Peppers:
Using the same skillet, add a touch more oil if needed, and sauté the sliced bell peppers until slightly softened but still vibrant. Sprinkle a bit of taco seasoning for extra flavor.
Assemble the Tacos:
Warm the blue corn tortillas in a dry skillet, flipping to ensure both sides are heated through.
Spread a spoonful of the avocado cream on each tortilla.
Layer with the cooked chicken and sautéed peppers.
Top with shredded purple cabbage, crumbled queso fresco, fresh cilantro, and a squeeze of lime.
