The sight of our Manzanilla Cacere?a extra virgin olive oil poured on the surface of a plate anticipates the pleasure of its pure, deep, intense flavour. Enjoyed on its own or used for cooking, it is an essential ingredient in our traditional cuisine but its properties make it highly suitable in today’s avant-garde cuisine.
Its aroma is exclusive, unique, different. This complex oil oozes a wealth of sensations, bursting with intense green fruit notes apples and leaves and its purity brings memories of fresh summer fruits. Notes of banana, green almonds, flowers, vanilla, pepper and cinnamon are also present and the background conjures images of holm oak forests, which abound where these olives are grown.
The palate is pure and clean; sweet at the start, it soon gives way to a warm, lively bitterness and a fine peppery character.
The finish is full of calm and persistent energy, with notes of leaves and green olives the essence of nature. MO has a calming effect, conjuring eternal and fundamental elements: bread, fresh water, rosemary and rockrose, figs and grapes. The stone, the trunk, the flower.

MO’s physical and organoleptic properties are enhanced by its extraordinary health benefits. It has a low acid content of less than 0.1%, it is rich in oleic acid (78%) and in linoleic acid (greater than 4%). It contains very few saturated compounds but a considerable amount of polyphenols, biophenols and Oleocanthal in particular.
