Sustainability and health consciousness already drive dining choices and will continue to be influential. However, I'm not entirely convinced that Global Fusion will be the decisive factor and trend. I do believe that restaurants will soon serve limited and zero-waste menus. They are adopting practices like recycling to reduce their environmental impact and promoting sustainable living. This shift benefits the environment and helps businesses save money, as ingredients become pricier and scarcer.

I am running a cafe in the city of mysore, Karnataka State of India, purely vegetarian plant based everyday fresh produce sourced from local farmers, called Cafe Nature's Blessing. I believe you can do more flavourful and exotic food with vegetables in comparison to meat based. The limit is endless just dream of new flavors with endless variety of vegetables and fruits.Its easy on stomach and gives you a better feeling after your meal.

Definitely is the norm now to include plant based/Vegan on your menu. Shouldn't be frowned at like we did when we first saw GF. With the world being more conscious of food wastage, prices rising globally and needing to support farmers and their produce, especially with concerns including a changing climate, we need to prepare better and work smarter. Using plant based ingredients in Patisserie or desserts may be reinventing or refreshing your recipes but your presentation will mostly remain your own identity. At the moment we are currently working on Vegan biscuits, new Vegan mousse cakes and Vegan Bakery items but the presentation is just as good if not better than sugary ingredients. Unless I told you it's plant based you couldn't tell.

Fully agreed on plant based cuisines and application that will contribute to multiple fiscal; local farming, better environment globally, healthier eating, creative cookings/ food offering ... Will only opt for fresh produce instead of processed ...less handling, less processing with preservatives but keeping wholesome and natural possible
