Excellent article Jake. I had a great uncle Claude, WWII vet, who used to make his own. He had a tiny cabin on the edge of his land where he would sleep during maple syrup season (rather than walk back to the house every night). Everyone in the extended family couldn’t wait to get their bottle mailed to them each year. It was the most flavorful maple syrup I’ve ever had. Produced on a farm near Merrill WI. ??
