Carlton Hotel Bangkok Sukhumvit recently announced the appointment of Lam Kok Weng as Executive Chinese Chef. The Singapore native will oversee all Chinese cuisine at the Carlton Hotel Bangkok Sukhumvit.
Chef Lam brings to the post three decades of experience, having begun his career back in 1989 at, in fact, Carlton Hotel Singapore. Since then he has gained wide-ranging kitchen experience including as cook, sous chef and assistant chef at major hotel properties and distinguished restaurants in Singapore and Jakarta. Although Singaporean, the chef likewise brings to the position long-term experience in Thailand: for the past 15 years he has lived and worked in Bangkok acquiring additional experience as culinary director and chef de cuisine in several noted luxury hotels.
For three decades Wah Lok has served the finest Cantonese cuisine to discerning diners in Singapore. The renowned restaurant has opened at Carlton Hotel Bangkok Sukhumvit. Wah Lok has earned numerous awards and a well-deserved reputation as one of the best Cantonese restaurants in Southeast Asia.
With his mastery of the Cantonese cuisine and a proficiency in four languages – Mandarin, Cantonese, English and Thai – Chef Lam Kok Weng arrives superbly qualified for and excited about the job.
