You can Use Ctrl N to start new worksheets that use book.xltx

Also you can turn off your start up screen via File : Options : General and down the bottom of the list remove the tick from the option "Show the Start Screen when this application starts" which will also force the use of book.xltx when Excel starts

simple and useful tips

I have seen estimates of how much time has been wasted over the decades by Excel users wanting a simple comma and two decimal places instead of what's called accounting. Add to that the fiddling with psychosis-inducing merge and it turns out Microsoft has cost us all an accumulated 250 million years!
