Recipe: Teriyaki Glazed Salmon with Sushi Rice and Kalamata Olive Salad

Ingredients:

  • 4 salmon fillets
  • 1/4 cup Yokoso Cooking Mirin Seasoning
  • 2 tablespoons Yokoso Cooking Sake Seasoning
  • 2 tablespoons soy sauce (Yellow Ben Soya Soy Light)
  • 2 tablespoons honey
  • 2 cups Yokoso Sushi Rice
  • 1/4 cup Yokoso Sushi Rice Vinegar
  • 1 cup water
  • 1 cup Kalamata olives, pitted and halved
  • 1/2 cup tobiko orange
  • Sesame seeds, for garnish
  • Green onions, thinly sliced, for garnish

Instructions:

  1. In a small bowl, mix together the Yokoso Cooking Mirin Seasoning, Yokoso Cooking Sake Seasoning, soy sauce, and honey to create the teriyaki marinade.
  2. Place the salmon fillets in a shallow dish and pour the teriyaki marinade over them, making sure to coat each fillet evenly. Cover and refrigerate for at least 30 minutes to marinate.
  3. Meanwhile, rinse the Yokoso Sushi Rice under cold water until the water runs clear. In a rice cooker or saucepan, combine the rinsed rice, water, and Yokoso Sushi Rice Vinegar. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is cooked and fluffy. Once cooked, let it sit covered for 10 minutes before fluffing with a fork.
  4. While the rice is cooking, preheat the oven to 400°F (200°C). Place the marinated salmon fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. In a large mixing bowl, combine the cooked sushi rice, Kalamata olives, and tobiko orange. Toss gently to combine.
  6. To serve, divide the sushi rice salad among plates. Top each serving with a baked teriyaki-glazed salmon fillet. Sprinkle with sesame seeds and sliced green onions for garnish.
