Edition 54 - 3-2-1 Method
Since it's Friday, I thought I would keep it light and focus on what's important.

Seriously, who doesn't enjoy a rack of juicy, succulent, tender baby back ribs?
So, what's the 3-2-1 method for ribs?
Preheat your smoker to 220 - 225F. I use hickory wood mainly but pecan and applewood are also good for ribs.
Remove all membrane from the ribs. Rinse and pat them dry. Season the ribs with a dry rub on all sides.
Step 1 - direct smoke the ribs for 3 hrs
Steep 2 - wrap the ribs in foil. You can add apple juice, brown sugar, or butter at this stage to keep them moist. Place them back on the smoker for 2 hrs.
Step 3 - unwrap the ribs. Baste with sauce, honey, or leave them dry. Place them back on the heat for another 1 hr.
That's it! The ribs should be retracted from the bones by about 1/4" when they are done. You can also temp check them and remove when they are around 200 - 205 F. Let the ribs rest for about 10 minutes, then enjoy!
