Ecolutions:Healthy Eating
These are 2 of my past newsletters on the subject of food. There is an article on WSJ.com that states Medicaid funds will be available for people to buy healthy food. I am excited about what this could mean.
Here is an example of how I spent money on groceries for a recent weekend trip. First of all, as a single person, I have to be willing to eat the same thing more than once so here is my main meal which is 4 servings
Hormel Meatloaf bought on sale at Safeway for 5 dollars $1.25 per serving for my side I made roasted pumpkin risotto 3.99 Marshalls for $1 per serving and frozen mixed vegetables for 1.99 from El Super for $.50 per serving for this meal the vegetable are the lowest price item but that isn't always the case. Note that these items came from 3 different stores so finding the best price takes time. For my snacks, I have some store-brand wheat crackers 1.99 mixed nuts & seed butter Target brand 6.99 ($.63 per serving). I also put nut butter on my sweet potatoes.
I eat a lot of sweet potatoes with skin because they are cheap ($.22 per serving) they are also fairly healthy and filling.
For my dessert, I bought flan for $.40 per serving and pan deluce ( El Super 5 for $4 or $.80 each)
