Eating Fresh in Italy: Fennel Salad

One of the best parts of my job is getting to visit Bayer sites around the world to meet with our Vegetable Seed R&D team members, and sample the delicious Seminis or De Ruiter produce they are developing for consumers (aka, you and me). Recently, I spent some time in Italy with fennel breeder Luca Pallottini.

As you may know, fennel is mostly used as a secondary ingredient, but Luca showed me how to make a salad that features fennel as the star of the show. The easy-to-follow recipe enhances the fresh fennel’s flavor by adding just a few simple ingredients. This dish is not very common in most parts of the world, but I want to share it so that anyone can enjoy a savory, summertime taste of Italy right at home.

As they say in Italy, it is “molto buona!” Enjoy!
