Chocolate topped rice crispy cakes

Again a flourless recipe that you and the kids would love

What you need

Square baking tin (ideally 21cm), heatproof bowl, 2 * pans, butter (for greasing) 1 spoon and baking paper (non stick).

Ingredients

  • 150g/ 5.3oz rice Krispies
  • 100g/ 3.5oz unsalted butter, plus a little extra to grease
  • 100g/ 3.5oz mini marshmallows
  • 300g/ 10.6oz milk chocolate

Instructions

Step 1. Line the baking tray with the greaseproof paper.

Step 2. Put the butter, marshmallows and 100g chocolate into the pan.

Step 3. Set your hob on a low heat and begin to melt your ingredients (gently mixing as you go).

Step 4. Add in your Rice Krispies and stir until they are completely coated.

Step 5. Pour your coated Rice Krispies into the greaseproof pan evenly spending the mixture and ensuring to flatten with the back of your spoon.

Step 6. Half fill a pan with water and bring to a simmer, put your heatproof dish onto the pan and break your chocolate into small pieces and place in the bowl. Continuously stirring so until you get a smooth consistency.

Step 7. Pour the melted chocolate over the Rice Krispies ensuring that you evenly coat and leave to set.

Once set you should be able to cut into 25 small squares ready to eat. I don't know about you, but these are some of my favourite treats to buy and when they are so simple to make you'd be crazy not too.

Enjoy the sticky mess!

Another idea is to crush M&M's (a 250g bag) and place these into your tray before you pour in the Rice Krispies mix. Or if you want to get fancy break a few Kit Kits up and scatter them over the top (once you have poured the melted chocolate over). Oh so many ideas not enough time. Decoration is down you really :-)
