?? Easy Edamame & Bean Bowl. (3 serves) ??
A taste of the EASY deliciousness I'm sharing in the 30 Day Plant Positive Jumpstart (exclusively within the Plant Positive Membership)
? Can of 4 bean mix, rinsed and drained. Mix with a generous squirt of Sriracha and a generous shake of Harissa powder.
? Hummus, 2 heaped tablespoons per serve.
? Edamame Guacamole, Blend 200gm shelled, cooked *edamame with 1/2 avocado + 2 tablespoons of lemon juice, several slices of red onion finely diced, a generous shake of garlic powder + salt, pepper and chilli flakes to taste.
? Broccoli, 3 heaped cups (I cooked mine in the microwave with a shake each of garlic powder and onion powder)

? PLUS, Per Serve: 2 large handfuls of mixed leaves, 1 handful of undressed coleslaw + optional sliced red cabbage and cherry tomatoes. Extra Sriracha to finish. I make my own hummus on the weekend. It has no added oil, just the tahini. You can use bought though. *I cooked my edamame for 2 minutes in the microwave with a little water then drained. I recommend making enough for 2-3 days and storing extra in the fridge with the avo seed in the gauc to prevent browning.
?? Plant protein per serve? => 8gm edamame | 4.6gm chickpeas + 2.6gm tahini | 6gm 4 bean mix | 3gm broccoli = minimum, 25gm with the other vegetables.
?? To up the protein anti? => Sprinkle with a heaped tablespoon of hemp seeds (5gm) and we get to 30gm of whole food plant-based PROTEIN!
