The Dylan Hotel's Conor Dillon On His Journey

Hospitality Ireland is the industry magazine for the Irish food service and on-trade drinks sectors.
The Dylan Hotel in Dublin completed a comprehensive refurbishment in September of this year, which included the original bedrooms and suites along with all guest corridors.
The owners of the hotel said the new design combines historical elements with classic influences and a contemporary, colour-forward style.
For the last five years, Conor Dillon has been general manager of Dylan, throughout this exciting process. We interviewed Dillon about what inspires him, his hospitality journey, and what his plans are for the future.
Little Pyg Terrace Opens In Dublin
Little Pyg Terrace is the new music-focused sister bar of ‘Little Pyg’ and is taking over the corner of the Powerscourt Townhouse, opposite the Westbury Mall.
The new venue will offer European-style al fresco dining with ingredients flown in fresh from Italy every week and prepared by Italian head chef, Frederico Rapali.
'Dublin's Best Sunset'
"What makes Little Pyg Terrace exceptional is our dedication to capturing the essence of mainland Europe and bringing it here to Dublin," said owner Paul McGlade Jnr.
"Having spent much time travelling the world, we have been inspired by the vibrant culture, rich flavours, and warm hospitality of Mainland-European cities, and in particular Italy and Italian food."
International Golf Tourism
International golf tourism is worth more than €300 million to the Irish economy, according to Fáilte Ireland.
It is estimated that Ireland welcomes 200,000 international golfers annually, and that a golf visitor typically spends three times more than the average leisure tourist.
'Sustains Employment'
“Our research shows a golf visitor typically spends three times more than the average leisure tourist with most of the spend going directly into local economies on non-golf expenditure such as accommodation, transport and food and beverage," said Fáilte Ireland CEO Paul Kelly.
"Golf drives tourism revenue and sustains employment into areas that might otherwise not benefit from tourism to Ireland."
Ireland’s Largest Foodservice Provider
Sysco has announced that it will create 50 full-time jobs, following the latest phase of a multimillion-euro investment in its Limerick distribution and support centre.
Ireland’s largest foodservice provider employs 1,550 people across its nine facilities nationwide, and it is actively recruiting across all departments.
With the addition of these new roles, the total headcount at the Limerick facility will surpass 400.
Guinness Open Gate Brewery In Chicago
Guinness officially introduced its Open Gate Brewery in Chicago to the public on Thursday, 28 September.
The brewery is located at 901 West Kinzie Street, in the West Loop neighbourhood.

This will be Guinness’s first bakery, globally, and its second brewery location in the US, with the Guinness Open Gate Brewery Baltimore having opened in 2018.
'Centuries Of Tradition'
The team behind Guinness said that this site will combine more than 260 years of brewing experience from Ireland with cutting-edge American brewing innovation, for a unique ‘Chicago experience’.
“I extend our warmest Illinois welcome to Guinness, as they join the Chicago brewing family, continuing centuries of tradition right here in the heart of the West Loop,” said Illinois Governor J.B. Pritzker.
Irish Restaurants Want VAT Revisited In Next Budget
The Restaurants Association of Ireland (RAI) has released its pre-Budget submission, which is calling for the government to reinstate the 9% VAT rate for small and micro-businesses serving food around the country.
The association also wants a 7.5% reduction in alcohol excise, as part of a plan to align Ireland’s excise levels with those of other EU countries.
'Real And Pressing'
“The challenges that Ireland’s restaurants, cafes and gastropubs currently face are real and pressing,” said Paul Lenehan, president of the Restaurants Association of Ireland..
“Without government action and a change in direction, many will lose the fight to keep their doors open.”
