It is delicious and contains vitamin C and protein to help enhance the body's immune function, but it is not resistant to storage.
Litchi drying process steps:
1、material choosing
Try to use a variety of lychees that are not separated from the dried fruit shell,such as:Glutinous paste, fragrant litchi, "concubine laughing litchi", he litchi is suitable.At the same time, it should choose seven to eight mature raw materials with large and round fruit shape, thick flesh and small core, high dry matter content, strong aroma and small astringency.The shell should not be too thin to avoid cracking or breaking and sunken when dry. At the same time, the number of dried lychees obtained by different varieties of fresh lychees is different. Take 100 kg dried lychee products as an example, fresh lychee is required: 400-450 kg glutinous rice paste; 380-420 kg xiangli; Black leaf, wo li 320-360 kg.
2、Early stage of drying
Slowly heating,To keep litchi shell from bursting,The temperature is best controlled at about 55℃,The humidity won't be too heavy at this time,and want to make the temperature inside the drying room rises as soon as possible,Humidity can be controlled at 60%,drying time is 4H.
3、 Medium stage of drying
At this point,the litchi shell is dry, so the temperature can be controlled at 65℃,drying room humidity control at 30%,It keeps going for 8 hours.
4、the stage of cooling
Dry like this for 12H,At this time the outside of the lychee is very dry,if keep drying,can make outside of litchi too dry.And finally the shell cracked,so need to take out for cooling for 5-6H,Allow the moisture inside the fruit to penetrate to the outside and dry again.
5、the stage of late
The temperature can be raised to 65℃ to continue drying,Drying time is 8-10 hours,until completely dry.
