Dragon Noodle Stir-Fry
This recipe is a fusion of flavors, colors, and textures – a symbol of strength, power, and good fortune as we embark on this new lunar cycle together.
Ingredients:
8 oz Chinese egg noodles
2 tbsp vegetable oil
1 lb shrimp, peeled and deveined (or chicken breast)
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 cup snap peas, trimmed
2 carrots, julienned
3 cloves garlic, minced
1 thumb-sized ginger, grated
3 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp honey
1 tsp sesame oil
Red pepper flakes (optional)
Fresh cilantro, for garnish
Instructions:
Cook the egg noodles according to package instructions. Drain, rinse with cold water, and set aside.
Heat vegetable oil in a large pan or wok over medium-high heat. Add the shrimp and cook until pink and cooked through. Remove from pan and set aside. *or chicken breast, cut into strips. Cook thoroughly.
In the same pan, add the bell peppers, snap peas, carrots, garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
In a small bowl, whisk together soy sauce, oyster sauce, honey, and sesame oil.
Push the vegetables to one side of the pan and pour the sauce mixture into the cleared space. Allow it to sizzle and thicken slightly.
Add the cooked noodles and shrimp (or chicken) back into the pan, tossing everything together to coat in the sauce.
If desired, add a sprinkle of red pepper flakes for an extra kick of spice.
Serve the Dragon Noodle Stir-Fry in bowls, garnished with fresh cilantro.
