We all know sugar if we see it in its refined form in the shop, or if we taste it in our favourite foods. Ironically, we don't eat it on its own because the idea of it is just plain wrong, but we don't complain when it's laced in other foods, it's not 'visible' but we can certainly taste it.
Now, you probably don't pick up every packaged food in the shop to see the sugar content. Probably because we don't want to be shocked by how much it has, and we may not see 'sugar' in the ingredients list so we assume it must be relatively low so no biggie right!
Now understanding how the ingredients read on the back of your packaging, the ingredients must be listed in descending order of weight, so the main ingredients in the packaged food always come first.
