Takamaka Rum - Origins

Origins

In 2000, Bernard and his father, Robert, ordered a book on home distillation and began their quest to produce “good” rum. Robert’s father, Grandpappy René Michel d’Offay had rooted his grandchildren’s interest in rum making through his own endeavors making the local Creole specialty, Rum Arrangé. Inspired by how sailors would preserve fruits and spices in alcohol, Rum Arrangé was made by macerating leaves, fruit, seeds, bark and other ingredients for up to six months after which it was enjoyed as a digestive or sweetened with cane sugar syrup.

With limited access to conventional distillation parts, Bernard and his father used their own backyard swimming pool as an interim cooling tower for their makeshift condenser. They went straight off to their local supermarket to buy yeast and refined sugar, and began experimenting.

Joined by Bernard’s older brother, Richard, and after more than a year of testing, resulting in both some truly questionable as well as some rather remarkable trial rums. In February 2002 they officially opened Trois Frères Distillery in Seychelles. Soon after, they distilled and delivered their first ever order of Takamaka dark rum.

Over the years, Richard and Bernard have honed their craft through their own sense of curiosity and discovery, but also through the limitations and curve balls that go hand in hand with the remoteness of the Seychelles. It’s impacted how they blend and age their rum, it’s forged the role they play in their community and it’s shaped who they are today as people, and as rum makers.

Cane Rum

At the beginning of rum making, there was little to no sugar cane grown in the Seychelles. Over the past 12 years Takamaka has worked with local farmers to boost their income by planting sugar cane in the forgotten corners of their lands. While vegetables and fruit grow best on flat land, which is limited on these mountainous islands, cane thrives in hilly and hard to reach places.

Aged across four barrels stores all at the historic home of La Plaine, St. Andre.

Today we have access to seven different types of cane which vary in color from green to striped green and yellow to purple “kann rouge”, which is the most common one in the Seychelles. The cane that is grown here has distinct terroir notes from our unique granitic soil.

It’s delivered directly to the distillery where it’s crushed immediately. The green juice that’s produced (known as vesou) is rich with notes of raw sugar and flavors of peppery soil. After adding yeast, we ferment our vesou for about three days before triple distilling through our copper pot still and continuous column still. The rum is diluted using Takamaka's own mountain spring water before rested it for a year and all before it is moved into barrels for the cask ageing program.

The Seychelles Series is where it all begins. This range of rums are a true expression of our tropical island paradise.

1. Takamaka Rum Blanc

Description: Light and easy drinking white rum with zero sugar added to its core flavor profile. The Rum Blanc is an easy to balance base liquid that serves as the heart of all Takamaka Rums in our range

Tasting Notes: Soft and creamy character with aromatic under tones

Blend Breakdown: Column Still Molasses based rum distilled up to 94% then diluted with island spring water to bottling strength

2. Takamaka Rum Overproof

Overproof

Description: An over-proof rum without the bite, adding balance to cocktails

Tasting Notes: A punch of spice, warming notes, with citrus, vanilla, banana, and grass.

3. Takamaka Rum Dark Spiced

Dark Spiced

Description: The signature spiced rum and the pride of the Seychelles

Tasting Notes: Local spices, papaya, vanilla and caramel with grassy and oak undertones

Blend Breakdown: White rum blended with vanilla, papaya and Seychelles spices

4. Takamaka Rum Koko

Koko

Description: Your new favorite coconut rum, using our Rum Blanc and natural coconut flavor.

Tasting Notes: Clean vanilla and coconut on the nose and taste profile

Blend Breakdown: Natural coconut essences are added to our rum blanc to create a light and harmonious blend

5. Takamaka Rum Zenn

Zenn

Description: A beautifully crafted Rum infused with pressed oak fines from ex-bourbon casks using our innovative cavitation method

Tasting Notes: Hints of vanilla, spice, and oak throughout the taste profile. Light vanilla sweetness on the nose. Medium body and clean finish

Blend Breakdown: A blend of Pot & Column distillates undergoes hydrodynamic cavitation and then rested in stainless steel

St. Andre Series

St André Series is a collection of four rums that really show what we are about as rum makers. They have been crafted to showcase our rich heritage and Creole traditions while at the same time pushing the boundaries of conventional rum making.

1. Extra Noir

Description: Full bodied and punchy rum using a combination of Pot and column Still Molasses Rum. The Extra Noir is soaked, pressed, and rested, revealing a high ester spicy and funky rum with an ex-bourbon essence of vanilla.

Tasting Notes:

2. Zepis Kreol

Description: A spice rum macerated with locally grown Seychelles cinnamon, nutmeg, four spice, and cloves, before pressing with ex Merlot French Oak Fines

Tasting Notes:

? A blend of local cinnamon, nutmeg, cloves and Four Spice on the nose and in the taste profile

? Subtle hints of vanilla

? Pot and Column Still Molasses Rum

3. PTI Lakaz

PTI Lakaz

Description: A smooth and silky blend of Seychelles Cane rum, aged in port and French oak casks with ex-bourbon molasses rum

Tasting Notes: Dried Apricot, cocoa beans, and anise with a complex dry spiced finish on the palette

Blend Breakdown:

? 15% Four year old Cane rum aged in New French Oak

? 10% nine year old cane rum aged in Ex-Ruby Port Casks

? 60% three year old pot & column Molasses rum aged in First Fill Bourbon Casks

? 15% eight year old foursquare molasses rum aged in Ex-Bourbon

4. Grankaz

Grankaz

Description: A herbaceous and slightly floral nose with toasted vanilla, stewed nuts, butterscotch, and a complex Seychelles spice profile

Tasting Notes: Cooked fruit and butterscotch in the body, with a floral nose and hints of vanilla throughout the blend
