According to Robert Schueller, director of public relations at Melissa's Produce, the more bumps, or lobes, a bell pepper has, the sweeter it will be. This isn't due to a myth about "male" or "female" peppers but is related to how the plant's flowers are pollinated. Female flowers, which are more dominant and get pollinated more often, tend to produce peppers with more seeds and more lobes, which translates to a sweeter taste.
So, next time you're at the grocery store or farmers’ market, flip those peppers over. For raw dishes like salads or snacking, look for peppers with four or five bumps for the sweetest flavor. Red peppers are the sweetest, followed by orange and yellow varieties. However, when cooked, these differences in sweetness tend to even out, so any pepper will do for cooking recipes.
