Diary of a novice taster

Being part of an expert sensory panel as a taster has been a truly enriching experience, full of flavours and aromas that I had never perceived before. I would definitely recommend it to anyone.

First Impressions

The day began with a brief theoretical introduction to the fundamental components of professional tasting. Besides learning about the five essential tastes—sweet, salty, sour, bitter and umami—we explored the differences between taste and aroma, as well as other aspects, such as the fact that spiciness is not a taste but a trigeminal sensation. That very first tasting session definitely piqued my interest.

One of the most surprising aspects was the tasting process itself. As I sampled different products, I became aware of the wide range of sensations they evoke, many of which we usually overlook. I began to pay attention not only to taste but also to aroma and presentation. Every little detail contributed to a complete sensory experience, allowing me to appreciate nuances I had previously ignored, such as certain aromas.

However, the most enriching part was discussing my impressions with the other participants. Everyone shared their thoughts and perceptions, creating an atmosphere of learning. One thing that struck me was how unique each palate is and how our personal experiences shape the way we enjoy food.

What did I take away from this experience?

By the end of the day, I reflected on the countless foods I had eaten throughout my life without truly appreciating them. Being a novice taster has taught me that behind every product, there is a story and a sensory journey that deserves to be valued.

I now apply what I have learned in the tasting room every day—I can recognise new nuances in each food and am more mindful of the products I consume.
