Delivering Michelin-Star Excellence: TAG’s Role in Pavyllon London

As one of the world’s finest chefs, Yannick Alléno holds 16 Michelin stars across 17 restaurants around the world, with Pavyllon London being his first venture in the UK and situated within Four Seasons Hotel on Park Lane.

At the very beginning of the project, TAG were tasked with adapting French kitchen designs to comply with UK building regulations, which later developed into a more complex scope of works.

Our scope expanded to not only adapting the drawings, but also overseeing works of the main kitchen, show kitchen, pantry spaces, first floor bakery, wine caves and two bars. Not to mention needing to meticulously review the design and build plans, identify unique features such as bespoke plinths, cantilevered cupboards and specially source granite countertops.

From the outset, our project team identified significant inconsistencies within the original designs. To ensure smooth workflow, we reviewed and reconciled all drawings, rectifying any discrepancies before proceeding with any construction and installation works within this complex project.

Recognising the complexity of the project we'd taken on-board, which involved multiple disciplines, our team developed a comprehensive Coordination Pack. This master document integrated M&E, fabrication, refrigeration, and ventilation drawings, providing a centralized reference for all subcontractors and stakeholders to work from.


We maintained close on-site management and coordination of all trades and subcontractors, fostering a collaborative environment and enabling rapid responses to any challenges which arose.

We were also able to leverage our own in-house engineering team, particularly for the refrigeration works, which was a substantial component of Pavyllon. This allowed for direct control over costs, quality, and the ability to adapt to changes in the schedule or program.

Our flexibility and communication skills enabled us to adopt a highly adaptable approach to the project, exceeding the initial scope by managing and installing the bespoke Molteni cook suite, ensuring complete client satisfaction.

Overall, we are beyond proud of the execution and craftsmanship demonstrated by every member our team which was involved in the works by overcoming numerous challenges, and adapting to unforeseen complexities with flexibility and resilience.
