Cinnamon "Roles"

IQTalent's Chief Sourcing Officer, Chris Murdock, has another family recipe to share: Cinnamon "Roles" (Recruiting Dad joke intended)

Here's how to make them:

Dough:

3.5 cups of flour ? teaspoon of salt 1 cup of milk 1 tablespoon brown sugar 1 package or 2.25 teaspoons of Instant/RapidRise Yeast 1 stick (1/2 cup) of melted unsalted butter 1 egg 2 teaspoons vanilla extract (optional)

  • Put the flour and salt into a stand mixer with the bread hook attachment, or you can knead this by hand if you missed arm day.
  • In a microwave-safe bowl, warm the milk in the microwave for 45 seconds.
  • Dissolve the brown sugar and yeast in the milk and set aside to start working.
  • Melt the butter and set aside.
  • Beat the egg with the vanilla extract.
  • Pour the milk mixture, melted butter, and beaten vanilla egg into the mixing bowl and run the mixer on low until the dough starts to come together.
  • Turn it up to Medium/Low (4 on a KitchenAid) for 8 minutes. Pull the dough out, form into a ball, and place back in the bowl.
  • Set aside with a wet towel on top and allow to proof until doubled.

Filling: 1 stick (1/2 cup) melted salted butter ? cup granulated sugar ? of a cup of brown sugar 2 tablespoons of cinnamon

  • Mix all four of the ingredients together until lumps are gone. It’ll still be grainy, and that’s just right. If it’s really runny, place in the fridge for 10 minutes, stirring every few minutes. This will thicken the mixture and make it easier to spread on the dough when you roll it out.
  • With the dough doubled, roll out the dough on a parchment or plastic wrap-covered counter or cutting board. You’ll roll it out to 12x16ish and be as close to a rectangle as possible.
  • Spread the filling over the entire flattened dough.
  • Roll up from the long edge if you want 12 smaller cinnamon rolls. Roll from the short edge if you want 8 larger cinnamon rolls.
