Festive focus
It’s that time of year already, and hopefully your Christmas bookings are coming in thick and fast.
At Class One we’ve got your back. We can supply all the fresh produce you’ll need to make festive favourites and special dishes, such as great value parsnips, kohlrabi, kale, carrots, leeks and Brussels sprouts. Add extra colour and superb flavour with January King cabbage or Dutch purple sprouts. And it wouldn’t be Christmas without some sweet and juicy shoebox leaf clementines.
It’s approaching the end of the Dutch season for strawberries, so they are in short supply now, as are limes due to vessel delays. This has also pushed the price of limes up. We do have some delicious fresh cranberries in stock from the US, a range of Southern hemisphere melons, and you can’t go wrong with UK apples at the moment.

For a colourful canapé, pair cranberries with pistachio cream and serve in filo parcels. Or for a nutritious, light dish make a dressing out of cranberries to bring the zing to a goat’s cheese and orange salad.

The unusual appearance of Jerusalem artichoke should not put people off! Delicious simply roasted, sautéed or pureed for soup, they’re a fantastic winter ingredient. Try pan frying slices of Jerusalem artichoke in butter and olive oil, with leeks and pancetta. They also work well in creamy dishes such as a risotto or smoked haddock gratin.
Offer an alternative vegetarian main in the form of pan-fried celeriac with a spiced vegetable couscous. Or try spiced celeriac with beetroot, chestnuts and cranberry gravy, served with crispy roast potatoes and red cabbage.
