Cucumber Raita is a simple dish staple in my state, "Gujarat." This hearty lunch meal can keep you energized until you choose to have an afternoon break and a snack. I usually eat about 24oz of this dish and am happy for the rest of the afternoon until dinner. However, I am a petite woman. You can consider a whole 32oz serving if that is good for you. You can also pair this with plain flatbread crackers or toast. You can try to steer away from flatbreads that have many seeds on them, as that will destroy the flavors of this dish.
The nutritional value of this dish is complex, as you can see in the chart below, and how good this dish can be for you. I am intolerant to dairy. So I use the "Silk" plain soy yogurt as it is now sweet. There are sweet yogurt dishes, but this is not one of them. Next week I will share a dessert recipe with you all.
