In 2023, the pre-sliced market witnessed a remarkable surge, with a significant portion of Culatello di Zibello Dop destined for convenient packaging. The Consortium for the Protection of Culatello di Zibello Dop, comprising 23 Dop-certified producers, disclosed promising trends reflecting the growing preference for pre-sliced options. While awaiting the final economic figures, the Consortium reiterated the outstanding performance of the pre-sliced sector, marked by a substantial increase in the volume of packaged products.
The statistics speak volumes: a staggering 1.17 million trays entered the market in 2023, utilizing 37,424 of the 81,324 certified Culatello di Zibello Dop, totaling over 142,000 kilograms. This represents 46% of the annual production, a notable leap from the previous year's 41.5%. This growth is even more remarkable when compared to a decade ago when pre-sliced options accounted for a mere 6% of total production.
A closer look at the numbers reveals that December, particularly the holiday season, recorded the highest number of Culatello destined for trays, with 4,544 pieces sealed. August also performed well, with 114,427 packages tailored for end consumers, mirroring the figures of June (113,881) and May (108,255).
Romeo Gualerzi, President of the Consortium for the Protection of Culatello di Zibello Dop, expressed satisfaction with these trends, noting, "We are witnessing a sector in constant growth, streamlining purchasing operations, preserving the product's sensory qualities, and reducing waste. These numbers are even more significant considering the challenges of 2023, including a 15% increase in raw material prices. Additionally, Culatello di Zibello Dop remains highly sought after abroad, with 88% of our exports destined for European markets."
