For many chefs, earning a Michelin star represents the pinnacle of culinary achievement. It’s a prestigious nod from one of the most respected institutions in the food industry, often seen as a symbol of excellence and recognition on a global stage. However, while a Michelin star can catapult a restaurant to fame, it is not the sole measure of success for a dining establishment.
In recent years, there has been growing discussion about the limitations and pressures associated with this accolade. High-profile chefs have handed back their stars or publicly distanced themselves from the Michelin system, highlighting that a restaurant’s success and worth extend far beyond the accolades it receives.
In 2017, Sébastien Bras, chef of Le Suquet in France, made headlines when he requested to be removed from the guide, saying he wanted to “free himself” from the pressure associated with the rating. Similarly, Andoni Luis Aduriz of Mugaritz has spoken about not chasing stars but instead focusing on creating a unique dining experience.
Chef André Chiang of Restaurant André in Singapore made a similar decision when he closed his two-Michelin-starred restaurant in 2018. He stated his desire to step away from the pursuit of perfection dictated by the Michelin system and to rediscover the joy of cooking on his own terms.
For many chefs, returning stars is not a rejection of excellence but a redefinition of success. As Aduriz once remarked, it’s about having the freedom to express creativity without being confined to external expectations.

A compelling narrative—woven through the design, menu, service, and overall brand identity—can transform a restaurant from a mere dining venue into an immersive destination connected to a particular story or ethos. This can stem from the restaurant's location, history, cultural inspiration, or even the personality of its founders.
For instance, a coastal seafood restaurant might use materials like driftwood, nautical ropes, and ocean-inspired colours to evoke the feeling of being by the sea. Meanwhile, the menu could reflect locally sourced seafood and traditional coastal recipes, grounding the experience in authenticity.

Dishoom is a great example of narrative-driven concept: Inspired by the Irani cafés of 20th-century Bombay, Dishoom transports diners to another time and place. From the vintage photographs on the walls to the evocative storytelling in their menus, every detail reinforces their homage to Bombay’s rich cultural heritage. This narrative fosters a sense of nostalgia and connection that keeps guests coming back.
