Creamy Leek & Rainbow Chard Gratin
When you think of gratin or au gratin, you probably think of potatoes. But what about reaching for some chard, magnificent with rainbow hues. Have you noticed the stripey fuchsia or the red chard with its magenta stems? What about navel orange, taxi-cab yellow and granny apple green? This time of year it’s a pure gift to be able to add color into our meal prep.
And lest you think this is too healthy, I will be sneaking just enough bacon, Gruyere and Parmesan in to satisfy your inner bad boy.
