Cran-Cherry White Chocolate Bark with Honey-Roasted Pistachios
Quit barking up the wrong tree. Try making this treat instead. It will soothe the savage beast in you. When I made it, I gave most of it away, because it was just too dangerous to keep around.
The Recipe:
16 ounces quality white chocolate such as Valrhona or Guittard
2/3 cup honey-roasted pistachios, roughly chopped, divided
2/3 cup mixed dried cranberries, tart cherries, and Ranier cherries, roughly
chopped, divided
2 drops each of pure vanilla and almond extracts
Melt chocolate in a bowl set over just simmering water, ( double boiler) stirring until smooth. Add the drops of extracts and stir to combine. Add half of the dried cranberries and cherries, pistachios; stir to combine.
Pour this mixture onto parchment-lined baking sheets and sprinkle the remaining half of cranberries, cherries, and pistachios over the surface of the bark and place it in the refrigerator for up to an hour or until ready to serve.
Cut or break the bark into bite-sized pieces before serving. I served myself many times over before I came to my senses and packaged the bark up to dispense to deserving individuals. Not that I don't consider myself deserving, mind you. Go on and get you some! Enjoy!
