Corridor Seven’s Journey with Ratnagiri Estate: Orange Fermentation

At Corridor Seven, our journey with Ratnagiri Estate has been an exploration and collaboration story. This story is about our recent experiment with orange fermentation, involving coffee cherries from Ratnagiri Estate and Nagpur oranges.

Our journey began with a 1260 km trip to the nearly 100-year-old, 117-hectare Ratnagiri Estate. Partnering with Mr. Ashok Patre, we aimed to create something unique by combining the two elements: coffee cherries and Nagpur oranges. We brought around 200-300 kgs of Nagpur oranges to Chikkamagaluru, marking the start of our experiment.

In Chikkamagaluru, we blended the coffee cherries with the oranges. The cherries were divided into three fermentation tanks, mixed in ratios of 1:3 and 1:6. The tanks were sealed with CO2 for 72 hours. Our team was involved at every stage, ensuring the highest quality throughout the process.

The result of this detailed fermentation process is two new coffees for the season: Ratnagiri Estate Orange Fermentation Washed and Ratnagiri Estate Orange Fermentation Naturals.

The Washed process offers a profile that includes grapefruit and a hint of orange pulp with a long finish. The Natural process brings out notes of orange peel, rounded acidity, and dried apricot. Both processes maintain the integrity of the coffee while introducing subtle yet distinct flavors from the oranges.
