Raw materials can be stored in our holding cabinet CP Next, which maintain optimal temperature and humidity conditions to preserve the freshness and quality of the ingredients.
Preparation and cooking can take place in a traditional oven or at low temperatures using our #multifunction #blastchiller MultiFresh? Next. This versatile machine allows for even cooking while maintaining the food's organoleptic properties.
After cooking, the food must be rapidly chilled or freezed. MultiFresh? Next allows for direct chilling of the food to 37°F or freezing to 0°F, depending on the needs, ensuring food safety and maintaining product quality.

Once chilled or freezed, the food can be safely stored and kept in CP Next. They keep the food at constant temperatures, preserving freshness and quality until service.
Before being served, the food must be brought back to serving temperature. This can be done in the oven or in MultiFresh? Next, ensuring that the regenerated food maintains the same quality as freshly prepared dishes.
