The coating around a fry can be compared to a type of pancake batter. This batter provides extra crispiness and helps retain heat for longer. However, the coating doesn’t completely seal the fry, as fries need to breathe. That’s why, for example, snack bar fry packaging has small holes. Without these holes, the fries would quickly become soggy.
Perfect match
For crispy fries, we didn’t just look at the composition of the coating but also at the choice of potato variety. Not every potato works with every coating, and vice versa. But together, our potato and coating experts at Aviko have found the perfect combination. That goes beyond crispy fries: we strive for the perfect match in every application. For example, we also create a plant-based cheese alternative made entirely from potatoes.

The sustainability of fries
Sustainability plays a key role in our innovation process. We actively work towards a future-proof supply chain, in which innovations are always developed in collaboration with our sustainability experts. For instance, fries with skin are more sustainable than fries without skin, as more of the potato is used. And a crispy fry is even more sustainable than a ‘regular’ fry, as the coating itself also contains potato.
