Classic Matzo Ball Soup Recipe

Here is a recipe for a classic matzo ball soup

Ingredients:

  • 4 cups chicken broth
  • 2 cups water
  • 1 large carrot, peeled and diced
  • 1 large celery stalk, diced
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp parsley, chopped
  • 2 eggs, beaten
  • 1/2 cup matzo meal
  • 1 tbsp chicken fat or vegetable oil
  • 4 matzo balls, store-bought or homemade

Instructions:

  1. In a large pot, bring the chicken broth and water to a boil.
  2. Add the carrot, celery, onion, garlic, salt, and pepper to the pot. Reduce the heat to low and simmer for 10 minutes.
  3. While the soup is simmering, make the matzo balls. In a medium bowl, mix together the eggs, matzo meal, and chicken fat or vegetable oil. Roll the mixture into 4 balls.
  4. When the vegetables are tender, add the matzo balls and parsley to the pot. Simmer for an additional 15 minutes.
  5. Serve the soup hot, with a matzo ball in each bowl.
