Christmas Market: Christmas Tree Brownies
Jordan Young
BSc Student Food Science and Technology, Graduate of FdSc Artisan Food Production, WCB Young Baker of the Year 2023.
As part of one of my modules (food industry professional practices) on my FdSc Artisan Food Production course at Nottingham Trent University (NTU) and the School of Artisan Food (SAF).
The group received a work-like project to plan and deliver a Christmas market at NTU Brackenhurst campus with all profits going to Reach Flower Pod Charity in Southwell, Nottingham, this charity supports people with learning difficulties. As a group, we decided to do a brownie cut into a triangle and piped on top with green buttercream to create a Christmas tree.
During this project, there were different elements to ensure the project was delivered successfully. These included New Product Development, Marketing, Food Safety (Labelling and quality assurance), Food Photography, and Planning (production and the market). Our team had 10 members each with their own role, my role was the project manager as part of this role I had to help and support each member when needed.
On the day of the market, the group was highly successful as we sold out within 1 ? hours, I think the group worked fantastic together and we raised over £300 for Reach Flower Pod Charity. I ?enjoyed this module and think I have learned valuable skills to enhance my skills when I return to the food industry in the future.
