Chowmein ( Vegetable / Chicken)

  • 30 ml / 2 tbs Vegetable Oil
  • 18 gm / 3 cloves Garlic fine chopped
  • 60 gm /1 medium Onion sliced
  • 24 gm / 4 green Chilli Sliced ( Optional )
  • 20 gm / 4 Red chilli whole (optional )
  • 240 gm Egg Noodles ( we can replace with rice noodle or egg less too to make Vegetarian / Vegan friendly ), boiled run through cold water and kee a side to drain water completely, this is really important step.
  • 130 gm Chicken Breast cut into slices ( Non-vegetarian option )
  • 200 gm Cabbage Juliana ( Thin slices )
  • 100 gm Green Bean slice ( This the main ingredients to get actual Nepalese Taste )
  • 100 gm Carrots Jillian
  • 30 ml / 2 tbs Soy Sauce
  • 15 ml / 1 tbsp Rice Vinegar
  • 30 gm / 2 tbsp. ketchup ( I don't like to add but that's the Nepalese way )
  • 15 gm / 3 tsp Salt
  • 1 gm / ? tsp. Red Chilli Powder ( optional I like extra kick )
  • 2 gm / 1 tsp. black pepper ( it's good for different heat )

Method make wok hot with oil, fry the garlic and dry Red Chilli until golden brown then onion, Green chilli and green bean slices then rest of vegetable. Toss nicely then add boiled egg noddles. quickly stir fry with salt, pepper then finish with first with soy sauce and vinegar. If you want to add ketchup it goes in last.

Note : add 48 gm of butter just before take it out which family secret from our eatery.
