Chipotle Shrimp Quesadilla Recipe and Wine

Your spring calls for a delicious and easy dinner that pairs perfectly with a chilled glass of our Red Mountain Semillon. This mouth-watering dish includes succulent shrimp seasoned with smoky chipotle and cooked to crispy perfection. Our Semillon is a dry, medium-acidity white wine that pairs beautifully with the bold and spicy flavors of the chipotle shrimp quesadilla.?

The recipe is as easy as the alphabet. Here are your ingredients and steps to a savory dinner.

Ingredients

10 ounces of medium shrimp, peeled and deveine

? cup orange juice

1 tablespoon of chipotle pepper

2 cloves garlic minced

? tablespoon canola oil

1 medium onion, sliced

1 red or yellow bell pepper, sliced

? cup of fresh cilantro leaves for garnish

Salt and pepper to taste

4 large tortillas

2 cups shredded Monterey Jack cheese

Your favorite salsa and guacamole
        

Directions

  1. ?Combine shrimp, orange juice, chipotle pepper, and garlic.? Marinate for 15 minutes.
  2. Heat oil in a large cast-iron skillet or saute pan over medium-high heat (cook on your grill too)
  3. When the oil is lightly smoking, add onion and pepper and cook for 10 minutes until lightly charred on the outside
  4. Push the vegetables to the perimeter of the pan and add the shrimp to the center
  5. Saute until cooked through, about 8 to 10 minutes
  6. Season with salt and pepper to taste
  7. Remove from the heat
  8. Coat a separate nonstick pan with cooking spray, oil, or butter and heat over medium-low heat.? Place one tortilla on the bottom, sprinkle with half of the cheese, and then top with half of the shrimp mixture and the second tortilla.
  9. Cook for 5 minutes until the bottom is crisp, then flip and cook for another 2 to 3 minutes.
  10. Cut into wedges and serve with salsa, and guacamole and sprinkle with cilantro leaves.

More on the wine: Semillon wine grapes are sourced from Artz Vineyard, located in the Red Mountain AVA, just a short walk from our winery. The vineyard is owned and operated by one of the original vineyard growers in the area, the Williams Family of Kiona Vineyards and Winery. The Semillon wine grapes are picked and the juice is pressed off right away. After fermentation, the wine is moved to French Oak Barrels where it ages for eight months.
