Cheesy Chicken with Mushrooms

Life in the "new normal" is rather dismal. Yesterday was a complete train wreck. Who knew that going to the supermarket would be frightening?! I went yesterday wearing an eye mask from an airline toiletry kit as a face mask. You need to go armed with a list and try to get in and out as quickly as possible, which is a bit difficult since many things have moved around or just not there. Also, once you pick up a piece of produce, you can not / should not put it back, which makes finding a ripe avocado nearly impossible. Enough of that...

This Cheesy Chicken with Mushrooms is sautéed and then baked. You can either put it in one casserole dish or individual baking dishes. You can use any kind of cheese you like, I used Parmesan, but mozzarella, Gruyère, cheddar, Swiss, etc.
