This is a great article Mike. We have really smart systems and people making processed foods irresistible to everyday people. We could be making food production healthier and more sustainable but they care more about maximizing profits.

All this amounts to is - irrespective of how they choose to market it - fake, uneccessary and over-processed food with incorporated supplements and derivatives which largely simulate nutritional value but are ill-compared to their natural counterparts No doubt this will latch onto the dominant themes of food security and 'Feeding the World'. The addiction we have to convenience and over processed food is responsible for nearly 75% of all preventable illness. What would be far more interesting is using AI and machine learning to deliver models which reduce or eliminate the catastrophic amount of food wasted each year. One third of all food produced is lost or wasted –around 1.3 billion tonnes of food –costing the global economy close to $940 billion each year. I will stick with my legumes, vegetables, salads, meats and Mediterranean diet. There is no need to add more flavour and more excitement and more sensory appeal to the incredible array of natural foods that already exist. What is needed is for people to learn how to cook.

Is it cheating...?? Or is it technology that can support faster innovation based on customer needs as well as product performance requirements... think clean label/ non allergen/ nutri score A / with digestibility index plus taste profile requirements.. as a brief.. and the output is shortlisted before it hits the application labs.... definitely a resource saving tool and hopefully this transfers into cost sensitive solution for many markets.

I appreciate NPD is taking advantage of the technology that is being placed at its disposal, although hasn't every industry? And it's not like we've seen a mass exodus of jobs because of this. In fact, there are more jobs than we have skilled people to place into.
