Chasing Dreams: Lessons from a Young Chef's Journey
We often talk about grit and determination in abstract terms, but what does it really look like in practice? Sometimes, it looks like a 17-year-old showing up in a new city on New Year’s Day, armed with nothing but a dream, an unwavering work ethic, and the knife his mentor gave him. No, not for protection, but to use in the kitchen.?
My nephew, just 17 years old, decided to graduate high school six months early so he could pursue his passion for cooking. His plan? Move to Chicago and jumpstart his career as a chef.
On January 1st, he arrived in the city, ready to begin his job the next day. But as life often teaches us, plans don’t always unfold as expected. The job he had lined up wasn’t what he’d hoped for. Faced with uncertainty, he didn’t panic or let the setback deter him. Instead, he doubled down.
With determination and self-motivation, he pounded the pavement, visiting restaurants across the city, handing out resumes, and asking for opportunities to "stage" (a culinary tryout where chefs showcase their skills). He didn’t just hide behind emails or applications—he showed up in person, ready to make an impression. And one of those doors he knocked on, gave him a chance.
After a day spent staging, the chef delivered bittersweet news: “I’m not hiring right now, but I am opening a new restaurant soon and will keep you in mind.”
My nephew didn’t just walk away and hope for the best. He followed up with a thoughtful thank-you note, expressing his gratitude for the opportunity and his excitement to learn more.
Later that same night, the chef reached out again. Whether it was the note, his performance in the kitchen, or something about his character—or, more likely, all three—the chef decided to check my nephew’s references.
