As Cardhu Distillery celebrates its bicentenary this year, I'm reminded of the incredible legacy left by pioneers like Helen and Elizabeth Cumming, whose courage and persistence paved the way for generations to come. Their story resonates with me deeply, as it echoes the journey of another inspiring woman in my life: Lisa L.
I first met Lisa, the founder of Dear Green Coffee Roasters , during the inspirent program. Discovering that she was our neighbour at Glasgow Collective John McBeth when I was just starting Naked Kimchi & Co felt like fate. Lisa’s journey into the world of ethical coffee roasting was nothing short of pioneering.
At a time when the specialty coffee scene was still in its infancy in Australia, Lisa was one of only two female roasters in the country—a trailblazer in a male-dominated industry. Her dedication to ethical and sustainable practices, combined with her relentless passion, set her apart. While the Australian immigration rules didn’t allow her to stay, this turned out to be Scotland’s gain!

“I love being in coffee because I love flavour and process. I adore the industry and the passionate people I get to hang out with and call my friends. I also like being self-employed and being able to make a difference through sourcing ethically and by paying staff the Real Living Wage.”
Lisa’s story is a testament to what it means to persevere, to innovate, and to lead with integrity. Her journey has not only inspired me but has also made a significant impact on the coffee industry in Scotland. She has shown that with courage and persistence, much like the Cummings, one can create a lasting legacy.
“Follow your passion and work hard. Start at entry level as a barista and learn. I’m very driven and can be a bit of a workaholic which isn’t for everyone, but surround yourself with people who encourage you.”
Here’s to Lisa Lawson and all the pioneers who continue to inspire us every day. Let’s raise a cup to the power of passion, persistence, and the courage to break barriers. ??
