October 18th is National Chocolate Cupcake Day, and what better way to celebrate than with this delicious recipe from the Food Network! ?? These cupcakes are rich, moist, and perfect for any time of year.

Chocolate Cupcakes (Yields 12) ?? Ingredients:

• 1/4 lb unsalted butter (room temperature)
• 1 cup sugar
• 4 extra-large eggs
• 1 1/3 cups chocolate syrup
• 1 tbsp pure vanilla extract
• 1 cup all-purpose flour
• 1 tsp instant coffee granules

Instructions:

1. Preheat oven to 325°F and line a muffin pan with paper liners.
2. Cream butter and sugar until fluffy, then add eggs one by one.
3. Mix in chocolate syrup and vanilla. Add flour and coffee granules, mixing just until combined.
4. Scoop batter into muffin cups and bake for 30 minutes. Cool before removing.

Ganache Icing:

• 1/2 cup heavy cream
• 8 oz semisweet chocolate chips
• 1/2 tsp coffee granules Melt everything together over simmering water, and dip the tops of the cupcakes into the smooth ganache. Yum!
