CAULIFLOWER SALAD “MADRAS”
Before anybody get’s their knickers in a twist about “real” Curries, let me explain something.
Many years ago, whenever we used commercially available, pre-mixed curry powder in Europe, more often than not, the name of the dish included the moniker “Madras”. This made it clear to everyone and all that the dish contained curry powder, cream, some fruit, and flour. There were also salads and cold appetizers using curry powder, which usually also used to end up being called “Madras”.
Almost nobody had ever tasted a real curry, much less cooked one, so the “classique” French way of preparing “curry sauce”, (sauce au curry à l’indienne) was usually utilized.
Hence – “Madras” or Indian Style.

7 年Hi Chef Hans .. Very right .. almost about the Madras Curry idea.. For one the French did have 2 colonies in India, Mahe on the West Coast, and Pondicheri on the East Cosst .. ( about 150 km away from Madras) .. Its believed that a Creole cuisine originated from here, which one might still find in Marseilles, mostly with the "Franco-Indian" community. We should also give due credit to Veeraswamys of London...an enterprising man from Madras to have opened the first "Curry House" in 1926 .. maybe another reason for the Madras Curry Powder .. Heres the recipe for Madras Curry Powder.. Coriander Seeds 2 tblspn Cumin Seeds 1 tblspn Whole Black Pepper 1 tblspn Mustard Seeds 1 tblspn Cinnamon Sticks .. 1 2" long Cloves ( optional, if you like the mix spicier,) .. secrets of spice . Indian Bay Leaf 3-4 Roast all ingredients on a pan , until mustard seeds pop .. Blend together . Store in airtight glass jars Cheers
