Can Frozen Be Fresh?

Fresh is always best but the clock is always ticking. If a refrigerated guacamole has 45 days shelf life but takes 21 days to get to your location, you only have 14 days to sell it and, by that time, the quality is degrading. What if you could receive it frozen and then slack out in a refrigerator. You would get the full shelf life with a product with no perceivable difference from the guacamole that was never frozen. Would that be of value to you?

9 å¹´The product is high pressure processed so it does not need preservatives besides a little ascorbic acid to preserve color. The final quality of the guacamole is the same as a refrigerated product that has been produced in the same way.

9 å¹´I like your perspective. Being frozen does it change the consistency of the product or does the frozen product include preservatives?
