Bring on the Sweet Heat

As the summer temperatures rise so does our frequency to be outside grilling, in fact 52% of Americans fire up their grill 2-3 times per week during the summer.  This gives us "grillers" lots of opportunity to experiment and I wanted to share this fantastic recipe for Grilled Apricots - very sweet and very healthy.                    

8 ripe apricots, halved & pitted                                                                                          1 tbsp olive oil                                                                                                                         salt & pepper                                                                                                                         Heat grill to 450. In a bowl, toss apricots, olive oil, sprinkle salt & pepper.    Place apricots, cut-side down, until starting to soften and marked, about one minute. Turnover and cook for 30 seconds more.  Remove from grill and serve.
