In this Crisp Autumn Apple Salad with Apple Cider Vinaigrette recipe, we’ve combined the refreshing crunch of Granny Smith apples with roasted sweet potatoes, tart cranberries, and creamy goat cheese, all tied together with a tangy apple cider vinaigrette. Crisp Autumn Apple Salad

This Crisp Autumn Apple Salad is a perfect balance of flavors and textures, making it an ideal dish for any fall occasion. The tartness of Granny Smith apples pairs beautifully with creamy goat cheese, while the roasted sweet potatoes add a cozy, earthy touch. Drizzled with a tangy apple cider vinaigrette, this salad is as refreshing as it is nourishing—much like the dual benefits apples bring to both health and beauty. Enjoy it as vibrant appetizer at your autumn gatherings or top it with grilled chicken for a light meal.

Ingredients:

For the Salad:

• 5 ounces (about 5 cups) mixed greens blend or kale
• 1 Granny Smith Apple, sliced
• ? cup dried cranberries or cherries
• ? cup crumbled goat cheese
• ? cup candied pecans or walnuts
• 1 sweet potato – cubed and roasted

For the Apple Cider Vinaigrette:

• ? cup apple cider vinegar
• 2 teaspoons maple syrup or honey
• 2 teaspoons shallot, finely diced or grated
• 1 teaspoon Dijon mustard
• ? cup extra-virgin olive oil
• Salt and pepper to taste

Instructions:

For the Apple Cider Vinaigrette:

1. In a small bowl, whisk together the apple cider vinegar, maple syrup, grated shallot, and Dijon mustard.
2. Gradually drizzle in the olive oil, whisking until the dressing is smooth. Season with salt and pepper to taste.

For the Salad:

1. Prepare the roasted sweet potato: Preheat the oven to 400°F. Toss cubed sweet potato with a drizzle of olive oil, salt, and pepper, then roast on a sheet pan for about 40 minutes or until tender and golden.
2. In a large bowl, toss together the mixed greens, apple slices, dried cranberries or cherries, crumbled goat cheese, nuts, and roasted sweet potato.
3. Drizzle with the apple cider vinaigrette and toss gently to combine.
