Proso millet has multiple benefits when consumed as human food. Proso millet is rich in minerals, dietary fiber, polyphenols, vitamins and proteins. It is gluten-free and therefore, ideal for the gluten intolerant people. Proso millet contains high lecithin which supports the neural health system.
It can be used in foods for people with gluten intolerance or celiac disease. The food industry in Europe and North America is in- terested in proso millet for its potential health benefits for humans as well as its mild flavor, light color, and gluten-free characteristics.
Ragi, Foxtail Millet, Bajra and Barnyard Millet are heating millets which means they should ideally be consumed during the winter season. On the other hand, Little Millet and Proso Millet have cooling properties and can be eaten during the summer season.”
