Ever wondered what makes our team tick and why our hiring managers love being part of The Bread Factory? Here on Behind the Loaf, we are going to dive into the world of a hiring manager and understand their role, experiences, and passion for all things bread!

Over the next few months, we will be sharing our Behind the Loaf articles, a series of interviews with hiring managers, and how they help shape our fantastic team and contribute to our high standards. The articles will also give insights into working at The Bread Factory and discuss what potential roles we have within their departments.

Today, let’s meet Simon Moore, our Group Head of Technical at The Bread Factory, in charge of all things Technical, including the hiring of Quality Auditors, Quality Managers and Technical Managers.


A Bit About Simon

"Hello, my name is Simon, and I’m the Group Head of Technical at The Bread Factory. My role is to ensure that our company remains fully compliant with the technical requirements set by the Food Standards Agency, other regulatory bodies, and our valued customers.

In a nutshell, I work to guarantee that our food is not only safe but also fully meets legal standards, so our customers can enjoy it with total confidence.

This role encompasses a wide range of responsibilities: from managing raw materials to overseeing the manufacturing of finished products, and ensuring safe and legal sales across the UK and, at times, in Europe and beyond. It’s a position that combines attention to detail with a dedication to compliance at every level."

What Simon Loves About Working at The Bread Factory

"My favourite aspect of working at The Bread Factory is our commitment to supporting and growing small food manufacturers. Leveraging my industry experience to mentor and guide these companies is incredibly rewarding.

We work with a select group of suppliers who craft unique, high-quality products, and through our retail channels, we get to showcase their work. Collaborating with suppliers who are passionate about what they do and eager to grow is inspiring.

It’s a pleasure to share insights on food safety, traceability, and regulatory requirements, helping them elevate their businesses. Plus, it lets me dive into the finer details of food safety and standards, something I’m passionate about!"

Simon’s Favourite Product: Pistachio Pain au Chocolat

"My absolute favourite item at The Bread Factory is the Pistachio Pain au Chocolat. It’s a masterpiece: a light, crispy pain au chocolat filled with rich chocolate and a layer of pistachio paste. The combination is just superb.

When I know they’re in the canteen or on a tasting panel, it’s as if I get a sixth sense that pulls me straight to them!"

What Makes the Team Special?

"The camaraderie within my team is something I value deeply. Although we’re a large group, there’s a genuine sense of belonging and collaboration across the teams who report to me.

Our team is diverse in every way—gender, ethnicity, age—and that variety enriches our working dynamic. We celebrate our successes together, and when challenges arise, we tackle them as a unit, pooling our collective knowledge and skills.

Supporting each other in producing safe, legal food is incredibly rewarding, and it’s wonderful to see how our shared experiences strengthen the entire business."
