Get ready to tantalize your taste buds as Barfly by Buddha Bar at Hilton Dubai Palm Jumeirah introduces their latest culinary creations under the expert guidance of new Head Chef Renzo Reyes. The dining experience at Barfly just got a whole lot more exciting with Chef Reyes at the helm, bringing his innovative culinary expertise to the forefront.

From the 20th of November, feast on new delectable small plates and sumptuous main courses, every dish is a masterpiece, meticulously crafted to please the senses. Embark on a gastronomic journey like no other as you savor the fusion of flavors and the artful presentation that defines Barfly by Buddha Bar. With a keen eye for detail and a passion for pushing culinary boundaries, Chef Reyes is set to elevate the dining experience to new heights.

The idea behind the new menu is too create a fresh take on some of the all-time favourite Barfly classics with new touches of Peruvian ingredients and techniques. Some stand out dishes include; Tuna tartare with aji amarillo acebichada sauce; Chicken Bao Korean style fried chicken, replacing the gochujang chili for panka, along with a salad of cucumber, mint and sesame oil; Softshell Bao with Escabeche sauce, kalamata mayo; Octopus Parrillero?mixed with Peruvian anticucho and yuzu kosho sauce. Lastly, the BBQ Short ribs Australian short ribs are cooked for 24 hours sous vide and served with soy sauce, mirin, orange juice and star anis to host a deep flavor which matches perfectly with the blackberry BBQ sauce.

Chef Reyes brings with him a wealth of experience and a fresh perspective that promises to redefine the culinary landscape at Barfly. His passion for creating exceptional dining experiences is evident in every dish that graces the menu, inviting patrons to embark on a culinary odyssey that celebrates creativity and innovation. When asked what got him into cooking, he said: “when I was about to finish high school, I remember not being very clear about what I wanted to do, however, one thing I did love, and that was getting to know new cultures. The beautiful thing about gastronomy is that it gives you the freedom to move around the world and continue learning every single time you cook”.
