Preparation steps:-
1- Add? water + Fruit Pulp + sugar + P. Sorbate + coloring agent to the mixing tank and heat it up tell it reach 85 c.
2- Mix Pectin + Modified Starch + Xanthan gum + 10 kg of the hot mixture in a separate small blender.
3- Add the blended pectin mixture to the preparation tank and continue mixing tell it reach 95 c.
4- Add Citric Acid to adjust PH To? 3.2 - 3.5 5- Once the mixture temperature reach 100 c, add glucose + the Flavor and mix tell it reach 103 c to target Brix 50 -55
6- stop the heater and continue mixing tell it reach 65 c.
7- start packing? at proper containers and let it cool down.
