Gellan Gum (plant gel) is a High molecular weight polysaccharide by the fermentation of a carbohydrate with pseudomonas elodea, purified, and powdered. Gellan Gum (Plant gel) gelation is promoted by calcium chloride.

Gellan Gum (plant gel) is used as gelling agent in microbiological culture and plant tissue culture as it is a clear gelling agent in plant cell and tissue culture media. With prominent gelling properties, it is widely used in Food and Beverage industry. It is mainly used in the suspension beverages at very less quantity. Gellan gum (plant gel) helps to suspend the particles overall from top to bottom of the drink and gives a stable suspension. Also, it is used in baked products to enhance the texture of baked goods.?
