Anji White Tea is not white tea, it is green tea!
White tea is usually made of picked tea buds, which are then simply processed without fermentation and frying, so the natural color and taste of the tea are retained.
Green tea requires the tea leaves to be withered and processed to prevent oxidation, so as to keep the green color. The same is true for Anji White Tea, which is a withered green tea, which is different from the production process of traditional white tea.
Anji White Tea belongs to roasted green tea, which is cold in nature and does not ferment.
The reason why it is named "Anji White Tea" is that its tea tree variety is called Baiye No. 1, which is a rare albino variety and is greatly affected by temperature. When the temperature is below 23℃, albino phenomenon will occur.
When the temperature of this tea tree is not high in spring, the new buds are slightly colored, and the leaves will soon turn white after unfolding. One bud and two leaves are completely white, and then they return to green.
The buds and leaves picked during this albino period are still yellow-green after being made into dry tea, and the bottom of the leaves will return to a bright white after brewing

In 1982, a rare tea tree over a hundred years old was discovered in the deep mountains and dense forests at an altitude of 800 meters in Anji County, Zhejiang Province: the spring tea buds are white and the main veins are green. This tea tree is the mother tree of the current Anji white tea special tree species "White Leaf No. 1".
Generally speaking, the color of tea leaves is green, ranging from light yellow green, light green to dark green, and a few tea buds are purple-red. The "White Leaf No. 1" tree species is quite peculiar, belonging to the "low temperature sensitive type", that is, when it is below about 23℃ (generally before Qingming), its buds and leaves are white; as the temperature rises, it becomes jade white in Guyu; after Guyu and before the summer solstice, it gradually turns into white and green leaves; at the summer solstice, the buds and leaves return to full green. Therefore, the picking time of Anji white tea is very short, only about 20 days in spring.
The buds of good Anji white tea are uniform, plump and bright in color. After the leaves are soaked, except for the green veins in the middle, the rest of the leaves are white, and the more they are soaked, the whiter they become. The soup is bright but relatively light. It has a distinct orchid fragrance, the soup is mellow and smooth, the taste is full, and the freshness is particularly prominent. There is no bitterness after long soaking. The free amino acids in the tea leaves of Anji White Tea will form caramel aroma substances under heating conditions.
