Anhydrous milk fat is manufactured from pure milk fat; it must include at least 99.8% milk fat and be made from butter or fresh cream to fall under this classification (AMF).

It is not included in milk or its derivatives by using procedures that allow for the total removal of non-fat solids and water. To ensure the neutralisation of free fatty acids during manufacture, anhydrous milk fats should not contain any additions. It has various qualities, including a creamy, rich flavour, the ability to be kept for around 24 months, the ability to come in different packaging, and the ability to be carried without refrigeration.

Additionally, it has a maximum water content of 0.1 percent and is intrinsically lactose-free. It has a strong taste that is similar to full-bodied butter. It is a mixture of triacylglycerols, or glycerol esterified to three fatty acids, each of which has unique physical characteristics, such as a melting point between 30 and 34 °C. After cooling, it starts to crystallise and transform into a soft, granular solid with a faint white-yellowish colour.
